When we crave for tilapia, we usually buy the fillet ones because they are much much cheaper than fresh tilapia here.

Here is what I usually do. Simple mix.

Missing Tilapia?
Check your nearest asian store and grab that Tilapia fillet.

Grab a cup of bread crumbs. Then Fry!
Garnish with tomatoes and red eggs!

Yum fix!

Recipe of the Week: RED VELVET CAKE

As promised, despite my need to check on this auto insurance quote a friend sent me, I am going to post 3 recipes before the week ends and here is the 2nd recipe of the week. To pair with the Smokey Chili with Pasta, here's a recipe of red velvet cake. A friend in Facebook has been craving for a velvet cake many weeks now. So this is for you, A :).

Red Velvet Cake
Ingredients
1/2 cup(1 stick)butter or margarine, softened
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 cup buttermilk or sour milk
2 Tablespoons (1-ounce bottle) Red food color
2 cups all-purpose flour
1/3 cup Cocoa
1 teaspon salt
1 1/2 teaspoons baking soda
1 tablespoon white vinegar
1 can (16 ounces) ready to spread vanilla frosting
Mini chips semi-sweet chocolate or milk chocolate chips


1. Heat Oven to 350 F. Grease and flour 13X9X2-inch baking pan.
2. Beat Butter and sugar in a large bowl; add eggs and vanilla, beating well. Stir together buttermilk and food color. Stir together flour, cocoa, and salt. Add alternately to butter mixture with buttermilk mixture, mixing well. Stir in baking soda and vinegar. Pour into prepared pan.
3. Bake 30-35 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wine rack. Frost; garnish with chocolate chips, if desired.

I want 5 whole cakes tomorrow for a small gathering of friends hahah. Okay, okay, I have not been eating any sweets the past week and it's payback time. Although my friends have been telling me they might bring in some best weight loss pills right after our small tea party. Tee hee!

Recipe of the Week: BAKED POTATOES VARIETY

This week's recipe is inspired by my craving with Wendy's baked potatoes! YUM! Hubby's Aunt taught me an easy way to bake potatoes but they cannot compare with the yumminess that Wendy's has. Anyhow, I hope this recipe which I got from mom would at least resemble to Wendy's yummy baked potatoes meals. Although, I must admit that this is calorie-packed and you might consider taking weight loss supplements after making and eating them, it is good to indulge from time to time.

GIANT BAKED POTATOES WITH MELTS IN YOUR MOUTH TOPPINGS

* Wash, scrub and dry 20 big potatoes. Place in a pan sprinkle with cooking oil and bake in pre heated 400F oven 1 hour and 30 minute or until tender. Cut off a little from the top of potatoes and put a dollop of garlic butter mixture, then top with your favorite topping. Return to oven and bake 15 minute more, or microwave 2 minutes.

A) Garlic butter mixture – beat with mixer until blended: 1 cup buttercup or margarine, 1 tbsp McCormick garlic powder, 2 tbsps chopped parsley.

B) Double cheese topping: Spread on top of potato Anchor cheesedale, then top with grated cheese ( not quick melt). Bake 15 minute.

C) Bacon and cheese: Cook 1 pkg bacon until crispy. Chop bacon. Spread Anchor cheesedale. Top with Bacon and bake 15 minute.

D) Sour cream and chives: Spoon sour cream on top of potatoes. Top with chives. Bake in 15 minute.

E) Broccoli and cheese: Cut off flowerets from 2 stalk broccoli Dip in boiling water 1 minute. Drain and set aside. Spread anchor cheese whiz on potato. Arrange broccoli on top. Bake 15 minute.

F) Chili and cheese: Spread anchor cheese pimiento on potato. Top with chili con carne. Bake 15 minute.

And just as I thought that this is going to be a lazy weekend once again, work poured in, I meant my sideline blessings have poured in, thanks to my angels :P. So before we go and have our little boy's bi-annual dental check up (which reminds me to check this charlotte cosmetic dentist), here I am trying to finish at least half of the blessings I got last Friday haha!.

Oh and yes, a friend shared this in Facebook and thought you might find it informative as well. Sadly though, 4 of my favorite comfort foods made it to the list yikes! So what are the Foods to Never Eat!:

  1. Canned Soups (lucky me, good riddance!)
  2. Processed Meats (aka hotdogs, vienna sausage, spam...all these are my faves!)
  3. Sugary Cereals (watch out kids!)
  4. Oscar Mayer's lunchables (and so I thought, all OM's are healthy tsk tsk!)
  5. Fried Chicken! (especially fastfood ones, buh-bye Popeye's yay!)
  6. Cheeseburger and Fries! (Mc D's...)
  7. Doughnuts (oh, I don't eat 'em)

Tomorrow, I am going to wear one of these long skirts, a pretty top, accessorize and doll up myself a little. And for the first time this year, I would binge on these dishes. Also, a first time for me to eat in this resto highly recommended by an online friend. Can you guess where it is?

I promised myself this year that before I turn 32, I would achieve a certain weight goal. Even if 115 is still 5 lbs more than my pre-wedding weight (which is my main goal), I think I'd be fine by it. Guess what, a day before I turn a year older, I am down to the last pound! What a great way to start my new year. I may be a little impatient to shed off this one last pound and would be tempted to take these Rapid weight loss pills, but if I continue to do what I am doing now, I guess I'd reach my pre-wedding weight in no time.

DH on Watches.

DH finds it very strange that I would rather invest on bags over watches. He just could not understand that I treat watches as accessories rather than investments. That is the reason why I go for watch design and style over its brands, the cheaper the better. While he clearly sees them as investment and do not mind spending more on watches. I am amazed by how expensive watches can be these days. Take a look at this Ulysse Nardin Macho Palladium. To be honest, I have not heard of the IWC Watches brand yet or am I too ignorant on watch brands. But as I was lurking at this designer watch online site, Lussori.com, I cannot help but wonder that a lot of people may be investing on designer watches, after all they could resell them and that the prices do not depreciate. Just a Quick Post.

I have finally found the time to upload photos in my Flickr account, hence this post. Since the day I can now eat meat, I have been pigging out on this new meal from Taco Bell. And hubby is very thoughtful to be bringing me this meal every single night. Our son is after the rice and soda, and you know who eats the rest lol. And yes, as a reward for my discipline and determination in dieting, dear hubby is thinking of purchasing these lady gaga concert tickets as he knows how much I want to watch Lady Gaga performs live.

Also, I whipped this pasta with red wine some days ago and I just think I poured in a little more red wine than what is required because as soon as hubby and I finished eating this pasta, we were sleepy and dizzy lol!
