As part of my commitment this year is to consistently serve my boys the healthiest dishes I can whip. We have cut-down on buying junkfoods and chocolates. On the other hand, DS' weekly fastfood kid's meals were lessened too. I do not want him to get unhealthy fats from junkfoods and end up taking diet pills in the long run especially after reading these methadrene 25 side effects. Here's one of the home-made snacks that DS oh-so love. Pizza bread, he loves munching on the Black Olives first before taking a bite.

Recipe of the Week: DRUNKEN CHICKEN

Since, chicken is such a default meal for us because beef and fish can get so expensive here. Let's try out this Drunken Chicken recipe this week. Have fun cooking, have a stress-free week ahead and don't forget to drink your daily dose of vitamin.

DRUNKEN CHICKEN
Pre preparation: Poach the chicken in a pan with water or stock, onion celery. Simmer till tender.

Ingredients:
300 grams chicken breast
few celery leaves and small onion.
1 tablespoon honey
½ tablespoon oyster sauce
½ tablespoon soy sauce
¼ teaspoon wine or sherry
¼ teaspoon five spice powder
3 teaspoon chopped spring onions
1 teaspoon fresh ginger
1 teaspoon toasted sesame

Procedure: In a bowl put white wine, honey, oyster sauce, soy sauce, ginger, spring onion, sesame seed, then spread over the sliced chicken arranged in platter.

Variation in using wine:In Vietnam they use beer.

Yes, I am ready with Fall! No, not because I am too tired with the scorching heat but more of the new seasons of the TV series I have been following, read: Gossip Girl and Glee :P. Also, by next month, we are ending our contract with our current cable tv provider as we are switching to Direct TV which provides more channels and yes, more affordable package. Now, that we have installed the small LCD tv in DS' room, the DVR is all mine hee hee! I have been spending too much time lately catching up with my fave tv shows and I just love that I get to manage my time more now. Speaking of time management, I better read these tv reviews which gives out tips on how to maximize our Direct TV.

Easy with the Sweets

Diabetes is a very serious health condition if left untreated. When I was carrying my first born, I developed a borderline gestational diabetes and was very careful with my sugar intake. In fact, I did not gain weight so much because I was eating very healthy dishes. Now, we all know that the saying: "Desserts are sweet to the lips but very bad to hips" is very true. I can truly attest to this saying but how come I cannot resist chocolates and other sweet pastries these days hee hee.

Speaking of Diabetes, I have learned that this disease ran in my family, my mom has it and so her other siblings. For other diabetic patients, they would use artificial sweetener such as EZ-Sweetz®. This is a liquid sucralose sweetener that has many features such as: zero calories and sugar, tastes like sugar, just one drop of it and it's enough to sweetened those beverages, it is free of Dextrose and Maltodextrin, and can be used for both cold and hot drinks. He's 5!

I was sorting out my Flickr photos and realized I haven't organized DS' 5th birthday party photos yay! Yes, time flies so fast, he's already 5 now. I still clearly remember how big my tummy was carrying him for 9 months and religiously taking the best prenatal vitamins while eagerly waiting for his arrival. Now, he's big and there are times he doesn't want to be called a baby anymore. Before I get too melodramatic here, here's sharing his yummy 5th birthday cake! The kids love it and so do the parents :).

My Version of Fajitas

Like I have said, I have lost more than 10 lbs and much of it can be attributed from dieting more than exercising. I really lose weight fast when I control my food intake or watch what I eat. I try to prepare less greasy and healthy meals as I do not want to end up taking prevera for desperate measure. Here is my version of healthy Fajitas. Only 1/4 the calories of the Fajitas you normally order in a mexican resto.

Before I check on this cheapest car insurance. Let me share this tip I got from DH's Aunt and another one from an online friend.

I always fail at making fried chicken crispy. Until I learned this tip from DH's Aunt. Dip chicken in flour, fresh milk and then flour again to get that crispy fastfood like chicken :).

Now here's what my online friend has to say:
Do it with egg and seasoned flour (garlic salt paprika pepper ground dried thyme)

Flour, egg, flour, then into a cookie rack to avoid soggyness.

Then in a pan, deep fry the chicken. Make sure the pan is small to avoid steaming the chicken.

Once fried, put in a cookie rack.

So where am I now in terms of my Weight Loss Challenge?
I remembered, my first entry under this category was in June 2008, that was 2 years ago. While the journey was long and admittedly, a struggle, here I am happy to announce that I am 6 lbs away from my wedding weight weeee! I have lost a total of 15 lbs! Also, I am proud to say that I did not take any diet pill because I am just a scaredy cat thinking about the various diet pills side effects.

This time around, I am concentrating on the toning part and thinking of trying this.

This Insanity 60-Day Workout Challenge Video has been earning great reviews. I truly hope I can commit to it and eventually tone my arms and flatten my tummy. Wish me luck!
