Recipe of the Week: HAM POTATO BITES
Do you know that too much oil in dishes can cause skin irritation, say blackheads. Despite the fact that I love greasy oily dishes, I try to avoid them. It would also do good for DH and DS whom I want to live a healthier life by providing dishes that are healthy. In tuned with DS upcoming 1st day in school, here's a recipe that would be very easy to prepare and your school kids would love to pack!
HAM POTATO BITES
Ingredients:
8 small red potatoes, about 1 1/2 to 2 inches in diameter (1 lb)2 tsp olive oil1 1/2 cups deli ham (or chicken) salad1/4 cup finely chopped fresh pineapple or well-drained crushed pineapple3 tbsp. chopped fresh chives3 tbsp. chopped almonds or cashews1 tsp. prepared mustard (optional)additional chives, almonds, and pineapple pieces (optional)
Prep time: 25 minutes
Cook time: 14 minutes
Serves: 16
1.) Heat oven 425F. Brush or rub potatoes with olive oil; toss to coat. Spread in shallow baking pan. Bake 14-19 minutes or just until potatoes are barely tender; do not overbake (potato shells need to hold their shape). Cut each potato in half crosswise. Cool slightly, until able to handle.
2.) Meanwhile, in small bowl blend salad, pineapple, chives, almonds and mustard, if desired.
3.) Using melon baller or spoon, gently scoop centers from cut side of potatoes, leaving at least 1/4 inch shell. (Cover and refrigerate removed potatoes for future use, if desired). If necessary, cut very thin slice from rounded part of potato halves to allow shells to stand upright.
4.) Mound about 1 tablespoon salad mixture into each shell. Garnish with additional chives, almonds and pineapple pieces, if desired.
